Banana Almond Butter Pancakes

I found these tasty treats over at Mark’s Daily Apple. Because they are made with bananas, I find no need to add maple syrup, though a little dollop of Greek yogurt and berries could be a nice addition. My personal favorite is adding spiced baked apples as a topping
Ingredients
- 2 Ripe bananas
- 1 heaping tablespoon Creamy almond butter
- 1 Egg
Methods
- Mash bananas. Food processors do a good, quick job
- Add egg and almond butter. Mix thoroughly.
- Pour batter into small cakes on a greased pan or griddle.
- Look for the edges to firm up a bit and the cake begin to steam – that’s the time to flip them.
